I think that we do need a few more details. In particular, do you want to be able to take the ESP32 devices backwards and forwards between work and home while you are doing your development work? If not, there would seem to be a number of possible approaches - if so, the problem becomes much less tractable, unless you can at least ensure that all the networks are on the same subnet.
