The sensitivity graphs in https://datasheets.raspberrypi.com/came ... tivity.pdf give the data behind it for HQ and GS cameras.The camera module is sensitive to IR as well as normal light. The standard camera has a filter to block the IR. The NoIR camera does not have that filter - hence the name No IR (filter).

v3 is similar, but I can't find the graph immediately.
In all cases the pixels still have significant sensitivity at the IR wavelengths, so dropping the IR filter allows for IR illuminated scenes.
