Yes, you're right of course that you can change the white balance with the "ColourGains" control. You should do that if things that are supposed to be grey are not grey (or at least, not sufficiently grey). But once you've got your greys near enough, if you then have specific colours that look wrong, then the colour matrices are your next step.
