1) That document is for Buster and installs Network Manager - this is already installed on Bullseye so somethings will report errors
2) Waveshare are not known for the best support * - they have a habit of releasing kit and not bothering to update documents once the OS changes. This can be OK for the previous release while it gets support / security fixes but at some point you can end up with kit not usable or a security risk from outdated OS.
I would also question using WPA as the security type and that poor password. Use a decent password and WPA2 or WPA3 as the security type.
