I would set aside your Chromium user profile or spin up a test user and test Chromium in a "clean" environment. I suspect you have some leftover cruft lurking in your user profile (which does not get deleted when you uninstall Chromium) that is not playing well with Chromium. I was up to date as of Tuesday and Chromium is working fine for me (Pi 5 with Bookworm and X11). If that resolves the issue you can diff the newly created profile and your old one to sort out what the issue is, or just abandon the old profile and carry on.
