As for the enclosure, could I get away with fixing the PSU in a plastic electric junction box and have holes in it for vents?


I think someone might have said:
This type of supply MUST be enclosed, in a fingerproof housing. Either plastic or earthed metal. All cables MUST be properly secured to the housing. You will need to check your local Codes of Practice for the details. If you don't know what this means and implies, get help from someone local who does.
To reinforce that, since you haven't set your location in your profile, we can only guess at the relevant regulations (German?) and I personnally am not expert in the details even for UK. Regulations may include, but are not limited to, requirements for access to be by use of a tool, and no possibility of contact with live parts by finger or screwdriver. You will need local guidance about the full scope and precise definitons in the regulations. If in doubt, don't guess.
