It's unlikey to be a satisfactory experience. Hence my suggestion.
You're looking at remote desktop, vnc, or what windows calls projection (if you can make that work with kodi on Pi as a source).
The problem is this: kodi decodes video and audio stream sends it to hardware, rdp/vnc srever grabs the screen from the buffer, encodes it, sends it over the network to your latop, latop decodes and displays it. Audio may or may not be included depending of software and settings.
That's a lot of work for the Pi and a lot of network bandwidth required. Video quality will also suffer.
Much less work for the Pi and much less network bandwidth needed if you stream the video file to a video player running on the laptop.
The only alternative I can think of would be to add a USB HDMI capture dongle to the laptop but that would also need additional software.
Then there's the issue of passing control input back to the Pi.
Are the security settings set by your employer? If so there's a good chance that any attempt to bypass them or to install any additional software will fail and potentially get you disciplined. And I doubt they'll look kindly on the sort of distraction palying videos while working will cause either.
