HDMI ARC lets you send sound both ways. There is no equivalent for video.
Are you using Bookworm or Bullseye? Bookworm uses Wayland by default and that blocks some VNC options. For Bookworm, you need Bookworm Wayland documentation or you can tell Bookworm to use X11 instead of Wayland.
