For a NAS you should really use two storage devices: one for the OS and one for the NAS data. Doing so makes it much, much easier to upgrade the OS or fix it when it or the drive is broken.

Which media types is best depends on your budget and use case.

SD card keeps the system small and quiet but you can only have one so OS and data have top live on the same device. It's also likely to be slower than a USB drive.

An HDD over USB 3 gives most storage per $ but has more latency than a flash drive and may be louder than flash based storage.

A SATA SSD over USB will have lower latency than an HDD but unless you're doing a significant amount of small random IO you probably won't notice. In terms of power consumption SSDs can need more than an HDD.

NVMe over USB 3 is pretty much the same.

NVMe over PCIe will never reach the advertised maximum speeds as the Pi 5 doesn't have enough PCIe lanes and the one it does expose is certified only for v2. They are also much more power hungry. One advantage though is that it doesn't have the added protocol conversion overheads that USB does.
