Thank you both. I don't have a graphical interface on those Raspberry Pies and from what I saw, it clones to another SD, not an image. I did read about a fork that allows to send to the image but looking at that fork, I didn't see a parameter to specify a filename instead of a physical device.
So I looked at image-backup and it does exactly what I need
I installed sshfs on my Raspberry Pie that I need to take a copy of and using image-backup, I sent it to another Pie that has that large SSD. The image was as small as when using pishrink. It couldn't shrink it any further, so that's a step I won't need to do. Using Etcher, I copied the image to another MicroSD (smaller than the original but 'big enough' and it booted flawlessly.
Looks like I won't even need to remove the MicroSD card anymore to create a bootable copy of my Raspberry Pies. Nice!
