I don't speak for RPi, and I can't give authoritative answers.

Assuming you have (or can get) the older SDK, I don't think anyone is forcing you to use v2. You may find less support for older s/w, but it should still work.

I have no knowledge of picoprobe compatibility with different SDK versions. I assume that the probe software will build on v1, since it targets v1 hardware. I'm not aware (but this might just be my ignorance) that different probe software is needed for RP235x targets.
