it may be that anydesk expects an X11 environment.
the latest "bookworm" PI-OS does not default to X11, but uses wayland compositor.
you might try switching to X11.... as follows:
sudo raspi-config
6 (advanced)
a6 (wayland)
switch to X11
reboot
then try it
