You're dealing with both moving targets (what is a "desktop computer" at any given time?) and a wide range of what people actually DO with desktop PCs. There will--likely--always be some sub-set of people for which no Single Board Computer (SBC) will meet their desktop needs. On the other hand, there are probably a great many people that would find Pi5 or even a Pi4B (or Pi400/Pi500) more than adequate for their daily needs.
For a large percentage of home users (and even some corporate users) an 8GB RPi500 with an M.2 NVME SSD (currently NOT available) is adequate.
Email, surfing the web, YouTube, light word processing and spreadsheets, even light vaming
