Answering 'Yes' to 'Use SD card to boot the USB device?' creates what's known as a 'Hybrid Boot' system, with the BOOT partition on the SD card and the ROOT partition on the USB/NVMe device. This is how we used to boot USB/NVMe devices on a Raspberry Pi 1 and Raspberry Pi 2 (and possibly Raspberry Pi 3) before native USB/NVMe boot support was introduced on the Raspberry Pi 4 and Raspberry Pi 5. I can't think of a good reason to use 'Hybrid Boot' on the Raspberry Pi 4 and Raspberry Pi 5.
Wondering if there might be a bug in usb-boot and/or image-backup if 'Hybrid Boot' is used on the Raspberry Pi 4 and Raspberry Pi 5 with Bookworm, I ran several tests. No errors were encountered running image-backup and after restoring the created image file, everything booted and ran properly.
Your issue is irritating me almost as much as you, but I'll be damned if I can spot a problem in the scripts.
