That's the default setup for jellyfin.(actually check under Networking Settings)
Unless you change things to give Internet access in jellyfin and then alter things in your router, no access from the Internet is normally possible.

Unless I've got the wrong idea and you mean you don't want jellyfin to go looking for things on the Internet (updates, meta data etc)
