You do not (again in my opinion) mount the drive into /mnt , you use it as the main drive, just like a PC.
I'm going to disagree with you there.
Given how the OS is installed on Pi it's much easier for some one with limited Linux knowledge to keep the OS and NAS data on separate physical devices. If the OS is on a different device you're much less likely to accidently wipe the data when reinstalling it.
Oh, and if the main purpose of that drive/partition is for data shared across a network I'd be mountingit under /srv not /mnt
