Yes, you can safely uninstall those packages.I'm guessing these are for the different Raspberry Pi boards that uses different versions of the ARM architecture (armv6 armv7, armv7l, armv8, etc)? If so, can I safely uninstall the ones that are not necessary for my Raspberry Pi (v7, v7l, v8 as I believe the first generation pi is armv6) so that future updates do not or are they still necessary for all boards?
Also your system would still work on a Pi 2, 3 or 4, as they will run the v6 kernel if they can't find a more appropriate one.
The Pi 5 requires the either the v8 or 2712 64-bit kernel as it can't boot a 32-bit kernel.
