This the info we need, I was also my guess as I remember to have seem something about it when network booting My PI3/4, although that was more about NFSv3 v.s. NFSv4.It looks like NFSV2 support was removed some time ago.

So OP needs to figure out what is more important. The NExT or the RPL 'treadmill' aiming for change to mainline kernel where this NFS protocol won't be the last thing w.r.t. compatibility with the past.
There are various options to keep the NExT NFSv2 connected to the Pi5 (and Pi6 or whatever) but need way more action than just imaging/swapping SD-cards.
