The AT commands will be needed to set up the connection initially but should then be transparent.
With Bookworm it comes with modemmanager installed which I presume should do some of the work for you but I've never figured it out and its the first thing I delete. I might be worth looking it up and see what it is supposed to do.
I've used mobile modules for sms, email and point-to-point, I've never tried to use the internet, I have proper mobile modems for that.
In days of old the SLIP protocol would be used but I think that's gone, you probably need to look up making a PPP connection https://www.waveshare.com/wiki/Raspberry_Pi_PPP_dial-up looks like it has some promising information.
