The core message of this post - that you have to manage the CS line yourself because spidev won't - is wrong. I don't know why you have not been successful, but after removing all the gpio code from this example I still see the CS, SCLK and MOSI lines changing.

3. With the gpio additions to your test code disabled, what does "pinctrl poll 8" show if left running while the test is run in another shell or process?
